
Chicken and Corn Soup with Chia and Turmeric
This is a filling, low carb meal which is really quick and easy to make.
Ingredients
Makes 2
- 2tsp turmeric
- 1tsp minced ginger or ginger powder
- 0.5tsp ground black pepper
- 1tbsp vegetable oil
- 1 chicken or vegetable stock cube
- 1 sliced chicken breast (you can use ready cooked chicken breast e.g. chili for a different flavor)
- 1tsp soy sauce
- 1l boiling water
- 1cup frozen corn (or kernels from 1 ear of corn)
- 1cup chopped spring onion (the dark green leaves are rich in lutein)
- 0.25cup chia seeds
- 1 egg lightly beaten
Method
- Lightly fry turmeric, ginger and black pepper in vegetable oil with stock cube.
- Add chicken and simmer for 3-4 minutes until the chicken is cooked through.
- Using a fork stir in the chia seeds and then the egg.
- Add the spring onions and corn and simmer for 1-2 minutes. If you use fresh corn it is deliciously crunchy as long as you don’t over-cook it,
- Serve garnished with black pepper and chopped spring onions
