Chicken and Corn Soup with Chia and Turmeric

This is a filling, low carb meal which is really quick and easy to make.

Ingredients

Makes 2

  • 2tsp turmeric
  • 1tsp minced ginger or ginger powder
  • 0.5tsp ground black pepper
  • 1tbsp vegetable oil
  • 1 chicken or vegetable stock cube
  • 1 sliced chicken breast (you can use ready cooked chicken breast e.g. chili for a different flavor)
  • 1tsp soy sauce
  • 1l boiling water
  • 1cup frozen corn (or kernels from 1 ear of corn)
  • 1cup chopped spring onion (the dark green leaves are rich in lutein)
  • 0.25cup chia seeds
  • 1 egg lightly beaten

Method

  • Lightly fry turmeric, ginger and black pepper in vegetable oil with stock cube.
  • Add chicken and simmer for 3-4 minutes until the chicken is cooked through.
  • Using a fork stir in the chia seeds and then the egg.
  • Add the spring onions and corn and simmer for 1-2 minutes. If you use fresh corn it is deliciously crunchy as long as you don’t over-cook it,
  • Serve garnished with black pepper and chopped spring onions
