Chickpea, Chia and Parmesan tasty crackers

These crackers are quite substantial and my son loves them as a quick healthy school snack that keeps him going till lunch time. Sometimes he has them with veggie sticks to dip in hummus.

Ingredients

Makes 5

  • 1can chick peas
  • 0.25cup chia seeds
  • 0.25cup chia meal (if you don’t have this, you can grind some chia seeds in the coffee grinder or food processor. Chia meal is not essential but it sticks the crackers together nicely)
  • 0.5cup grated or shaved Parmesan cheese
  • 2tsp rosemary
  • 1small pinch cayenne pepper or chili
  • paprika to coat
  • salt sprinkling

Method

  • Whizz the chick peas in your food processor in 2 batches
  • Mix in other ingredients
  • Spread between 2 layers of re-usable baking Teflon or baking paper and roll till 2-3mm thick
  • Remove top layer of sheet and sprinkle with paprika and salt
  • Mark squares or diamonds with a knife
  • Bake at 180 degrees Celsius for 20 minutes and invert onto a metal rack and return to the oven for another 20 min at 60 degrees Celsius. Leave in oven to dry while oven cools.
