Green Bean and Cucumber Salad with Herb Dressing

This tasty light salad is packed with lutein

Ingredients

Makes 4

  • 2cups green beans chopped into 4cm lengths and steamed for 6 minutes (or longer if you don’t like them crispy) with a large sprig of rosemary and then plunged into cold water
  • 1 Lebanese cucumber chopped into similar 4cm lengths
  • 2tbsp fresh rosemary needles
  • 2 large sprigs of parsley
  • 0.5cup chopped spring onions
  • 1 small garlic clove
  • 2tbsp lemon juice
  • 2tbsp olive oil
  • 1 pinch or sugar or a drizzle of honey
  • 1 pinch of salt and pepper

Method

Salad:

  • toss the green beans and cucumber
  • stir together salad and dressing

Dressing:

  • Whizz together in a food processor or chop and then crush with a mortar and pestle
