
Green Bean and Cucumber Salad with Herb Dressing
This tasty light salad is packed with lutein
Ingredients
Makes 4
- 2cups green beans chopped into 4cm lengths and steamed for 6 minutes (or longer if you don’t like them crispy) with a large sprig of rosemary and then plunged into cold water
- 1 Lebanese cucumber chopped into similar 4cm lengths
- 2tbsp fresh rosemary needles
- 2 large sprigs of parsley
- 0.5cup chopped spring onions
- 1 small garlic clove
- 2tbsp lemon juice
- 2tbsp olive oil
- 1 pinch or sugar or a drizzle of honey
- 1 pinch of salt and pepper
Method
Salad:
- toss the green beans and cucumber
- stir together salad and dressing
Dressing:
- Whizz together in a food processor or chop and then crush with a mortar and pestle
