Pear and Walnut Green Salad

This salad is quick to make and high in lutein and omega-3 fatty acids.

Ingredients

Makes 4

  • 2cup green leaves
  • 1 thinly sliced crispy pear
  • 0.25cup thinly sliced yellow or orange capsicum
  • 0.25cup thinly sliced blue cheese or crumbled feta
  • 0.25cup chopped walnuts
  • 2tbsp balsamic vinegar
  • 1tsp sugar

Method

  • heat the balsamic vinegar with the sugar till dissolved (microwave for 30s) and then cool
  • toss together veggies
  • top with cheese and walnuts
  • drizzle with balsamic vinegar and sugar mix
