
Pear and Walnut Green Salad
This salad is quick to make and high in lutein and omega-3 fatty acids.
Ingredients
Makes 4
- 2cup green leaves
- 1 thinly sliced crispy pear
- 0.25cup thinly sliced yellow or orange capsicum
- 0.25cup thinly sliced blue cheese or crumbled feta
- 0.25cup chopped walnuts
- 2tbsp balsamic vinegar
- 1tsp sugar
Method
- heat the balsamic vinegar with the sugar till dissolved (microwave for 30s) and then cool
- toss together veggies
- top with cheese and walnuts
- drizzle with balsamic vinegar and sugar mix
